Garbuzova Kasha (Ukrainian Pumpkin Millet Porridge)
♡
Did you know?
In Ukraine, pumpkin porridge is traditionally served on St. Michael's Day to bring good luck for the harvest.
Method
Rinse the millet under cold water, then toast it in a dry pan for 3‑4 minutes until lightly golden.
In a saucepan, melt the butter over medium heat, add the diced pumpkin and sauté for 5 minutes.
Stir in the toasted millet, then pour in the milk (or oat milk) and bring to a gentle boil.
Add the sugar, cinnamon, and a pinch of salt; reduce heat and simmer, stirring occasionally, for 15‑20 minutes until the millet is tender and the pumpkin is soft.
Whisk the egg (or flaxseed egg) into the porridge, cooking for an additional 2 minutes to thicken.
Serve hot, garnished with chopped walnuts (or sunflower seeds) if desired.
