Garbuzovi Varenyky (Ukrainian Pumpkin Dumplings)
♡
Did you know?
Pumpkin varenyky are traditionally served in Ukraine during the autumn harvest festival, symbolising abundance and the return of longer days.
Method
In a large bowl combine the flour, salt, and egg; gradually add water and knead until a smooth, non‑sticky dough forms.
Cover the dough with a clean cloth and let it rest for 20 minutes.
Meanwhile, roast the pumpkin until tender, then mash it and mix with butter, sugar, cinnamon and a pinch of salt to create the filling.
Roll the rested dough thin (about 2 mm) on a lightly floured surface and cut out circles of roughly 7 cm diameter.
Place a teaspoon of pumpkin filling on each circle, fold over, and press the edges firmly to seal, forming half‑moon dumplings.
Bring a large pot of salted water to a boil, add the varenyky in batches and cook until they float to the surface, about 3–4 minutes.
Remove with a slotted spoon, serve hot, and optionally top with sour cream and sprinkle with toasted walnuts or their pumpkin‑seed substitute.
