Meat Aspic (Kholodets)
♡
Did you know?
Before modern gelatine packets, cooks relied on collagen-rich trotters and joints to set kholodets naturally.
Method
Rinse the pork trotters and beef well, then place them in a large pot with cold water.
Bring to a gentle simmer, skim the foam, and add onion, carrot, bay leaf, peppercorns, and salt.
Cook slowly until the meat is very tender and the broth feels slightly sticky when cooled on a spoon.
Remove the meat, strain the broth, and shred the meat into small pieces.
Arrange the meat in dishes, pour over the clarified broth, and chill until fully set.
Serve cold with mustard on the side if suitable for the diner.
