1. Heat a large frying pan or griddle over medium heat with a knob of butter.
2. Add sausages first — cook turning occasionally 10-12 minutes until cooked through.
3. Add bacon rashers and cook 2-3 minutes each side.
4. Cut soda bread and potato bread into triangles. Fry in the same pan 1-2 minutes each side until golden.
5. Halve tomatoes and cook cut-side down 3-4 minutes. Add mushrooms alongside.
6. Fry or poach eggs to your preference — yolks traditionally runny.
7. Arrange everything on a warmed plate, season and serve immediately.
