Garbuzovi Pampushky (Ukrainian Pumpkin Doughnuts)
♡
Did you know?
Pumpkin doughnuts, or pampushky, are traditionally enjoyed during Ukraine's harvest festivals, symbolising abundance and the start of autumn.
Method
Combine warm milk, a pinch of sugar, and the yeast in a bowl; let sit 10 minutes until foamy.
In a separate bowl, mix pumpkin purée, remaining sugar, melted butter, eggs, salt, and cinnamon (if using).
Add the yeast mixture to the pumpkin mixture and stir to combine.
Gradually fold in the flour until a soft, slightly sticky dough forms. Cover and let rise in a warm place for 45 minutes.
Turn the dough onto a lightly floured surface, roll to about 1.5 cm thickness, and cut 8 cm circles. Let rest 10 minutes.
Heat oil to 175 °C (350 °F). Fry doughnuts until golden, about 2 minutes per side. Drain on paper towels.
While still warm, dust each doughnut with powdered sugar and serve.
